1 cup pumpkin puree
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp sea salt
1/2 cup cane sugar*
1/3 cup brown sugar
2 teaspoons pure vanilla extract
3 large eggs
1/3 cup olive oil
1-1/2 cups gluten-free all-purpose flour
2 tsp cinnamon

I also only have tried this recipe with this gluten-free flour so cannot vouch for others. Also, if you don't have brown sugar, I make my own by adding 1 TBSP molasses to every cup of sugar and mix well and store in an airtight container.

Preheat the Oven: Heat it to 350°F (175°C) and prepare a 9x5-inch loaf pan (I use these steel ones because they are cheap and work perfectly but if you have glass or a tin pan, you may need to adjust baking time so check after 45 min) by greasing it or lining it with parchment paper (I use parchment).
Mix Dry Ingredients: In a large bowl, whisk together the dry ingredients until evenly mixed.
Combine Wet Ingredients: In another bowl, blend the wet ingredients until smooth.
Time to Combine
Now comes the best part—mixing the ingredients together!
Add Wet to Dry: Pour the wet mixture into the bowl of dry ingredients.
Stir Gently: Use a spatula to mix until just combined. Avoid overmixing to keep the bread tender.

The Baking Process
